Vinification for the Merlot Terroir Littoral from Fortant de France

After the grapes were cold macerated for 4 days to favor color intensity and fruit notes, the musts from the single vineyard sites were vinified separately. High temperatures were avoided to preserve the varietal character. 

After fermentation, a warm maceration took place for 7 days, which served to refine the tannins and gave the wine its body. This was followed by aging on the lees for 3 months. After the tasting of the base wines, they were combined into a single varietal cuvée.
