The Pecorino from Tenuta Ulisse sparkles in the glass with a bright yellow color and greenish shimmer. This Italian white wine caresses the nose with a fruity bouquet. Delicious and sweet aromas of candied citrus fruits, white peach, pineapple and papaya unfold. These refreshing notes are rounded off by a subtle saline nuance.

This refreshing pecorino from Italy is present on the palate with an invigorating acidity and develops a great structure with plenty of extract. The long-lasting finish of this wine is melting with balsamic hints.

Vinification of the Pecorino Terre di Chieti from Ulisse

The ULISSE line consists of single-varietal wines, which impressively demonstrate the fantastic aromas and flavors that are created when indigenous grape varieties grow on the ideal soils for them. The origin of Pecorino grapes is uncertain, but they have been cultivated for centuries in the central regions of Italy, such as Abruzzo. The grapes are selectively harvested by hand in 10 kilogram containers, cooled by dry ice and transported undamaged to the winery. There they are selected again to ensure an absolutely healthy harvest.

The grapes are cooled down to -5°C within 3 minutes using nitrogen. This breaks up the cell structure and promotes extraction, which explains the intense, fascinating fresh and fruity aroma of this wine. Fermentation takes place at a controlled temperature in stainless steel tanks, followed by ageing in the same tanks for a period of 3 months.
