Vinification of the Alto de la Ballena Premium Cuvée Tannat Merlot Cabernet Franc
The powerful Premium Cuvée Tannat Merlot Cabernet Franc from Uruguay is a cuvée vinified from the grape varieties Cabernet Franc, Merlot and Tannat. The grapes grow close to the sea in Maldonado. The vines here dig their roots deep into soils of shale. Due to the moderating influence of the nearby sea, the grapes ripen more slowly and develop more aromatic complexity. When perfectly ripe, the grapes for the Premium Cuvée Tannat Merlot Cabernet Franc are harvested exclusively by hand without the use of coarse and less selective grape harvesters. After the harvest, the grapes are quickly taken to the winery. Here they are selected and carefully crushed. Then fermentation takes place in small wood at controlled temperatures. After the end of fermentation, the powerful Premium Cuvée Tannat Merlot Cabernet Franc is aged for another 9 months in American oak barriques.
