Relentless - Shafer Vineyards

Shafer Vineyards' Relentless is an expressive California red wine made from Syrah (90%) and Petit Sirah (10%) grapes.
Translated, Relentless means "unbitterly." This wine is therefore dedicated to the relentless pursuit of perfection of winemaker Elias Fernandez. 

In the glass shows an almost dark purple color. The bouquet delights with aromas of dark prunes and dried figs. This is joined by hints of freshly ground pepper, black truffle and some smoke. The palate is indulged by a silky texture and a wonderfully balanced, full body. The tannins are perfectly integrated into this red wine. The finish convinces length and multilayered fruit nuances. 

Vinification of the Shafer Relentless

The harvest for this red wine takes place exclusively by hand. The grapes are carefully selected in the winery before the mash is fermented in stainless steel tanks. After fermentation, this wine is aged for 30 months in French oak barriques (Allier and Troncais). 

Food recommendation for the Relentless by Shafer

This dry red wine from California is the perfect food companion to cold appetizers - especially carpaccio -  grilled vegetables or even spicy goulash stews.
