The elegant Saperavi from Winery Bediani pours into the glass in a luminous ruby red. In the glass it reveals wonderfully expressive notes of blackcurrant, blackberry, plum and sour cherry. Added to this are hints of red currant.
On the palate, the Saperavi from Winery Bediani starts off delightfully aromatic, fruit-driven and balanced. On the tongue, this well-balanced red wine is characterized by an immensely velvety texture. Thanks to the moderate acidity, the Saperavi caresses the palate with a silky mouthfeel, without lacking freshness at the same time. On the finish, this wine from the Kakheti wine-growing region delights with good length. Once again, nuances of pomegranate and plum appear. In the aftertaste, mineral notes of the soils dominated by black earth and volcanic rock join in.
Vinification of the Saperavi from Winery Bediani
This red wine clearly focuses on a single grape variety, namely Saperavi. Only first-class grapes were used for this wonderfully balanced varietal wine from Winery Bediani. The grapes grow under optimal conditions in Kakheti. Here the vines sink their roots deep into soils of volcanic rock and black earth. After being harvested by hand, the grapes are brought to the press house as quickly as possible. There they are selected and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. After fermentation is complete, the Saperavi can continue to harmonize for several months on the fine lees.
