Champagne Special Cuvée Brut from Bollinger is a characterful, lively and seductive sparkling wine from the French wine-growing region of Champagne, vinified from the grape varieties Chardonnay, Pinot Noir and Pinot Meunier.
In the glass, this wine shines a sparkling gold with light golden highlights. The perlage rises to the surface in very fine bubbles and conjures a wonderful mousseux. The nose is treated to an outstanding aromatic complexity. Aromas of roasted apples, stewed apples and peaches unfold - filigree underpinned by spicy hints. On the palate, this French sparkling wine convinces with an excellent combination of structure, length and liveliness. The bubbles envelop like velvet. This is joined by elegant aromas of pear, brioche and notes of fresh walnut.
Vinification of the Bollinger Special Cuvée
The grapes (Chardonnay, Pinot Noir and Pinot Meunier) come from 85% Grand Cru and Premier Cru vines in Champagne.
The base wine is aged in both stainless steel tanks and oak barrels. After cuvémentation, the second fermentation follows. This sparkling wine matures on its lees for at least 3 years. This is twice as long as the appellation requires. Once the aging is complete, the sparkling wine is disgorged.
