Vinification of Syracho from Rouvalis Winery

The grapes for Syracho grow in the sun-drenched Peloponnese region, in the Peleponnese PGI growing area, on calcareous soils. The Mediterranean climate with warm summer days and cool nights plays a key role in the development of the grapes. The grapes are carefully harvested by hand in order to pick only the ripest and best grapes, which provide the ideal balance of fruit and acidity. The vines are traditionally tended in the vineyard and cultivated in line with sustainable principles.

After manual harvesting, the grapes are gently crushed and fermented at controlled temperatures. Vinification takes place in stainless steel tanks at around 14–16 °C. Fermentation on the fine lees, also called sur lie, gives the wine additional fullness and complexity. The minimum five‑month maturation on the lees ensures a delicate texture and makes the wine gracefully velvety. Aging takes place exclusively in stainless steel tanks to preserve the fruit-driven and fresh profile. Winemaking is supported by the use of DIAM TCA-free corks, ensuring the wine remains free from undesirable maturation indicators. The result is a high-quality product with a long finish and lasting freshness that reflects the quality of hand harvesting.
