Vinification of the Terres Viognier from Domaine de la Baume
The elegant Terres Viognier from France is a single-varietal wine, pressed from the Viognier grape variety. The ripeness of the grapes for this wine from Viognier is influenced to a very high degree by the climate of the growing region. In Languedoc, the grapes thrive in a warm climate, which is reflected, among other things, in particularly well ripened grapes and a rather high must weight. At the time of optimal ripeness, the grapes for Terres Viognier are harvested particularly quickly and at the coolest possible time of day to preserve their aromas. After the harvest, the grapes are quickly transferred to the press house. Here they are selected and carefully crushed. Fermentation follows in stainless steel tanks and small wood at controlled temperatures. At the end of the fermentation, the Terres Viognier is allowed to further harmonize on the fine lees for a few months.
