Vinification expertise of Tsigello from Rouvalis Winery

The vines are cultivated on the calcareous soils of the Peloponnese growing region, more precisely in the subregion Slopes of Aigialeia PGI. Here, the grapes benefit from a microclimate characterized by mild winds and optimal sunlight. The winemakers rely on sustainable and gentle cultivation in order to fully bring out the expressiveness of the Sicilian grape variety Mavrodaphne. The handpicking of fully ripe grapes takes place in the late evening hours to preserve freshness and fruit intensity. Vinification at controlled temperatures begins after manual processing of the grapes, during which the grapes are gently separated from the stems. Maceration with the skins lasts for about 14 days, allowing optimal extraction of tannins. Maturation takes place in amphora-shaped tanks to preserve the natural texture and terroir. During the six-month aging period, the wine remains unfiltered, contributing to its natural fullness and authenticity. The use of diamond-shaped TCA-free corks protects the wine from harmful influences and ensures long aging potential. The result is a modern, high-quality red wine with a distinctly pronounced structure and a complex aroma profile that showcases the Mavrodaphne grape variety at its best.
