Vinification of Barolo DOCG from Ascheri

The grapes for Barolo DOCG - Ascheri come from selected sites in the heart of the Barolo DOCG area in Piedmont. Here, the interplay of limestone, clay and marl provides an ideal basis for ripe Nebbiolo grapes. The vines root deeply in the soils and thus absorb many mineral components. The continental climate with warm days and cool nights ensures a long ripening period. This allows intense aromas, stable acidity and fine tannins to develop. Harvesting is selective, mostly by hand, to bring only ripe berries into the cellar.

After strict selection, the grapes are destemmed and gently crushed. Fermentation on the skins takes place traditionally in stainless-steel tanks or large vats. The skins remain in contact with the must for an extended period so that color, tannin and aroma are gently extracted. Fermentation is temperature-controlled in order to preserve the delicate notes of red fruit, violets and minerality. Repeated punching down of the cap or gentle pumping over ensures even extraction. After alcoholic fermentation, malolactic conversion usually follows, allowing the wine to gain calm and balance.

Subsequently, Barolo DOCG - Ascheri matures for an extended period in wooden casks. Depending on the style, large traditional casks made of Slavonian oak or a combination of large casks and used barriques are employed. This type of maturation lends the wine structure and depth, while the fruit clearly remains in the foreground. The casks contribute only subtle notes of vanilla, nut and spice.
