Vinification of the Gallinotto Barolo from Mauro Molino

This powerful red wine from Italy is vinified from the Nebbiolo grape variety. The grapes for this red wine from Italy are harvested exclusively by hand once they are perfectly ripe. After the harvest, the grapes are brought to the winery as quickly as possible. There they are sorted and gently crushed. Fermentation then takes place in small wooden barrels at controlled temperatures. Following fermentation, the wine is aged for several months on the fine lees before it is finally bottled.
