More information about Chablis Les Vieilles Vignes - Pascal Bouchard

In the glass, the Chablis Les Vieilles Vignes from the hand of Pascal Bouchard offers a bright golden-yellow color. The first nose of Chablis Les Vieilles Vignes flatters with nuances of lemons and green apple. Mineral notes join the fruity components of the bouquet.

On the palate, Pascal Bouchard’s Chablis Les Vieilles Vignes opens wonderfully aromatic, fruit-driven and well-balanced. Some wines are dry on the label, others truly are. This white wine belongs to the latter, as it was bottled with only 1 g of residual sugar. Thanks to its balanced acidity, Chablis Les Vieilles Vignes caresses the palate with a soft mouthfeel without sacrificing freshness. On the finish, this white wine from the Burgundy wine region delights with a beautiful length. Once again, hints of green apple and lemon appear. In the aftertaste, mineral notes from the clay- and limestone-dominated soils join in.

Vinification of Pascal Bouchard Chablis Les Vieilles Vignes

This white wine clearly focuses on a single grape variety, namely Chardonnay. For this wonderfully balanced varietal wine from Pascal Bouchard, only first-class harvested grapes were used. In Burgundy, the vines that produce the grapes for this wine grow on limestone and clay soils. After harvesting, the grapes are quickly brought to the winery. There they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. Fermentation is followed by several months of aging on the fine lees before the wine is finally racked.
