Vinification of Pascal Bouchard Chablis Les Vieilles Vignes
This white wine clearly focuses on a single grape variety, namely Chardonnay. For this wonderfully balanced varietal wine from Pascal Bouchard, only first-class harvested grapes were used. In Burgundy, the vines that produce the grapes for this wine grow on limestone and clay soils. After harvesting, the grapes are quickly brought to the winery. There they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. Fermentation is followed by several months of aging on the fine lees before the wine is finally racked.
