Château Peybonhomme - at the mouth of the Gironde river
Château Peybonhomme, or Château-Peybonhomme-Les-Tours by its full name, is located on a hill at the mouth of a river near the commune of Cars, east of the Gironde estuary in Bordeaux. The Hubert family, which manages the associated winery, has been here since 1895. The castle itself has a crenellated tower that dates back to the 17th century. Catherine, Jean-Luc and Guillaume Hubert now look after the family estates and produce wonderful Bordeaux wines on them.

The family's history as winemakers began with Catherine's great-grandfather, who acquired Château Peybonhomme in 1890, which was classified as Premier Cru Bourgeois at the time. After a checkered history in which, for example, the second tower of the château collapsed after a fire in 1944, with the family having escaped a bombing shortly before, the family business stands strong today. in 1997, Catherine and Jean-Luc discovered Château La Grolet, which they fell for and used as the basis for their line of biodynamic wines. finally, in 2007, Guillaume would join the winery after completing his environmental and ecological studies. In the meantime, Rachel also assists him in the family vineyards.
Terroir of the Château Peybonhomme
Château Peybonhomme benefits from its location near the Gironde River and the Atlantic Ocean, whose large bodies of water act as a strong temperature regulator. Thus, extreme temperature peaks are rare. The soils are strongly characterized by limestone and clay.

Although the Huberts also grow mainly the Bordeaux classics such as Merlot and Cabernet Franc, they have also rededicated themselves to the cultivation of white grape varieties, a tradition that was also prevalent in Bordeaux but has increasingly fallen into oblivion since World War II. For about ten years, white grape varieties have been planted again at Château Peybonhomme, including:
- Semillon
- Sauvignon Blanc
- Colombard
These grape varieties benefit from the soils of the château and have a wonderful minerality.

Château Peybonhomme - organic through and through
In the vineyards, strong attention is paid to the naturalness, so the use of copper against mildew is kept very low, the soil is plowed. The vineyards are not mowed. Efforts culminate at Château La Grolet with biodynamic certification.
The grapes are harvested exclusively by hand. In the cellar, concrete tanks are used for fermentation, autochthonous yeasts are used. Depending on the wine, aging also takes place in concrete or in oak barrels.
