Vinification of Cochon Volant Corbières Rouge AOP from Caraguilhes
The foundation for the first-class and wonderfully balanced Cochon Volant Corbières Rouge AOP cuvée from Caraguilhes is Carignan, Grenache and Syrah grapes. After the grape harvest, the grapes are quickly brought to the winery. There they are sorted and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. Vinification is followed by maturation on the fine lees for several months before the wine is finally racked. After the wine is finished, Cochon Volant Corbières Rouge AOP is carefully harmonized.
