Vinification of the Stark-Condé Field Blend Stellenbosch WO
The basis for the first-class and wonderfully balanced Field Blend Stellenbosch WO cuvée from Stark-Condé are Chenin Blanc, Roussanne, Verdelho, and Viognier grapes. The grapes grow under optimal conditions in the Western Cape. Here, the vines drive their roots deep into soils of granite and clay. After hand-picking, the grapes are brought to the winery as quickly as possible. There they are selected and gently crushed. Fermentation then takes place in small wooden barrels at controlled temperatures. After the end of fermentation, the elegant Field Blend Stellenbosch WO is aged for another 8 months in French oak barrels.
