Vinification of Le Rosé by Domaine Paul Mas
The basis for the first-class and wonderfully elegant cuvée Le Rosé from Domaine Paul Mas are Caladoc, Cinsault, Garnacha and Pinot Gris grapes. In Languedoc, the vines that produce the grapes for this wine grow on soils of clay and limestone. Of course, Le Rosé is also determined by the climate and viticultural style of Pézena. This French wine can be described as an Old World wine in the best sense of the word, with an exceptionally impressive presentation. The grapes for this rosé wine from France are harvested, at the time of optimal ripeness, to preserve their aromas particularly quickly and at the coolest possible time of day. After the grape harvest, the grapes reach the press house in the fastest possible way. Here they are sorted and carefully broken up. Then fermentation takes place in concrete at controlled temperatures.
