The final of this youthful white wine from the wine-growing region of the Val de Loire, more precisely from Pouilly-Fumé & Pouilly-sur-Loire, finally convinces with considerable reverberation. The finish is also accompanied by mineral hints of the soils dominated by flint and limestone.

Vinification of the Les Terres Blanches by Pascal Jolivet

The elegant Les Terres Blanches from France is a single varietal wine, made from the Sauvignon Blanc grape variety. The grapes grow in optimal conditions in the Val de Loire. The vines here dig their roots deep into soils of flint and limestone. The grapes for this white wine from France, when perfectly ripe, are harvested exclusively by hand . After the hand harvest, the grapes reach the winery by the fastest route. Here they are selected and carefully ground. Fermentation then takes place in stainless steel tanks at controlled temperatures. Vinification is followed by aging on the fine lees for several months before the wine is finally bottled.
