Vinification of the Domaine Notre Dame des Pallieres Lirac
The basis for the first-class and wonderfully powerful cuvée Lirac of Domaine Notre Dame des Pallieres are Grenache and Syrah grapes. After the hand harvest, the grapes immediately reach the winery. Here they are selected and gently broken up. Fermentation then takes place in stainless steel tanks and concrete at controlled temperatures. After the end of fermentation, the Lirac is allowed to further harmonize on the fine lees for 10 months.
