After the harvest, the grapes quickly reach the winery. Here they are sorted and carefully crushed. Fermentation follows in stainless steel tanks and small wood at controlled temperatures. After the end of fermentation, the Mercurey Rouge Pinot Noir is aged for another 10 months in small French oak barrels.
