Vinification of the Peter Mertes Biorebe Merlot
This well-balanced red wine from Italy is made vegan from the Merlot grape variety. After harvesting, the grapes are brought to the winery as quickly as possible. There they are sorted and gently crushed. Fermentation in stainless steel tanks at controlled temperatures follows. After fermentation, the wine is aged for several months on the fine lees before it is finally bottled. After the wine is finished, the Biorebe Merlot is gently harmonized.
