More information about Grand Cru Classé Rouge Pessac-Léognan AOP - Domaine de Chevalier

The Pessac-Léognan Rouge from Domaine de Chevalier in Bordeaux offers a dense, ruby-red color in the swirled glass. After the first swirl, this red wine reveals great density and richness, which shows in distinct church windows on the rim of the glass. Poured into a Bordeaux glass, this Old World red wine presents wonderfully expressive aromas of blackcurrant, violets and blackberry, rounded off by cloves contributed by the barrel aging.

This wine delights with its elegantly dry flavor profile. It was bottled with exceptionally little residual sugar. As you would expect from a wine in the icon wine segment, this French wine naturally enchants, despite all its dryness, with the finest balance. Flavor does not necessarily need residual sugar. Powerful and multi-layered, this silky red wine presents itself on the palate. The finish of this red wine from the Bordeaux wine-growing region, more precisely from Pessac-Léognan, finally impresses with an extraordinary length. The aftertaste is also accompanied by mineral facets from the clay- and gravel-dominated soils.

Vinification of Domaine de Chevalier Pessac-Léognan Rouge

This powerful red wine from France is vinified from the grape varieties Cabernet Franc, Cabernet Sauvignon, Merlot and Petit Verdot. The grapes grow under optimal conditions in Bordeaux. Here, the vines drive their roots deep into soils of clay and gravel. The Pessac-Léognan Rouge is an Old World wine in the best sense of the word, as this French wine exudes an exceptional European charm that clearly underscores the success of wines from the Old World. When perfect physiological ripeness is ensured, the grapes for the Pessac-Léognan Rouge are harvested exclusively by hand, without the aid of strenuous and barely selective mechanical harvesters. After hand-picking, the grapes are immediately brought to the press house. There they are selected and gently crushed. Fermentation then takes place in small oak barrels at controlled temperatures. After fermentation is complete, the powerful Pessac-Léognan Rouge is matured for a further 16 months in oak barrels.

Food recommendation for the Pessac-Léognan Rouge from Domaine de Chevalier

This red wine from France should ideally be enjoyed at a temperature of 15 - 18°C. It is perfectly suited as a companion to boiled veal topside with beans and tomatoes, stuffed cabbage rolls or goose breast with ginger red cabbage and marjoram.
