Vinification of the Antigua Bodega Prima Donna Tannat
The basis for the balanced Prima Donna Tannat from Canelones are grapes from the Tannat grape variety. The grapes grow close to the river in Canelones. The vines here dig their roots deep into soils of granite. Due to the balancing influence of the nearbyriver, the grapes ripen more slowly and develop more aromatic complexity. The grapes for this red wine from Uruguay are harvested exclusively by hand when they are perfectly ripe. After the hand harvest, the grapes immediately enter the press house. Here they are sorted and carefully broken up. Fermentation follows in small wood at controlled temperatures. Fermentation is followed by aging on the fine lees for several months before the wine is finally bottled.
