Prinz Salm - A Winery in the 32nd Generation
The winery, that of the Princes zu Salm-Salm, is Germany's oldest family-owned winery. After 800 years, Felix Prinz zu Salm-Salm together with his wife Victoria now manages the family winery Prinz Salm in the 32nd generation. This is a long period of time to gather knowledge and experience, to gain insights, to reflect on basic values and to pass them on to the respective successors. It is true thatthe Family is founded on tradition and shaped by it, but every generation brings changes. The 32nd generation also wants to set its own priorities.
Philosophy
Nature is at the center of the daily work in the vineyard. Accordingly, respectful treatment of it is rewarded with a unique natural product.
"I want my children to be able to eat the grapes from the vines!" Following this very personal imperative, Prince Michael decided as early as 1988, as one of the first top wineries, to adopt organic farming.
Wine is not made in the cellar, but outside in the vineyard. In doing so, Weingut Prinz Salm relies on the forces of nature, and ensures well-supplied soils, vital vines, reduced yields and healthy grapes. Only hand-picked grapes are allowed on the press and in the cellar.
The vinification process is based on classical methods and modern cellar technology. And on the old vaulted cellar, built of green slate, which provides a balanced coolness for quiet fermentation - and later for long, undisturbed storage time.
