Vinification of the Antigua Bodega Protagonista

The balanced Protagonista from Uruguay is a cuvée, pressed from the grape varieties Cabernet Franc, Marselan and Shiraz. The grapes grow close to the river in Canelones. The vines here dig their roots deep into soils of granite. Due to the balancing influence of the nearbyriver, the grapes ripen more slowly and develop more aromatic depth. The grapes for this red wine from Uruguay are harvested exclusively by hand when they are perfectly ripe. After the hand harvest, the grapes immediately reach the winery. Here they are sorted and carefully crushed. Fermentation follows in stainless steel tanks at controlled temperatures. Fermentation is followed by aging on the fine lees for several months before the wine is finally drawn into bottles.

This red wine from Uruguay is best enjoyed tempered at 15 - 18°C. It is perfect as an accompaniment to pumpkin casserole, spinach gratin with almonds or cod with cucumber-mustard vegetables.
