Vinification of the Buitenverwachting Blanc de Noir Rosé
The basis for the powerful Blanc de Noir Rosé from Coastal Region are grapes from the grape varieties Cabernet Franc, Cabernet Sauvignon and Merlot. In Coastal Region, the vines that produce the grapes for this wine grow on soils of clay, loam, marl, volcanic rock and black earth. When perfectly ripe, the grapes for Blanc de Noir Rosé are harvested exclusively by hand, without the help of coarse and less selective full harvesters. After the harvest, the grapes are taken to the press house by the fastest route. Here they are sorted and carefully broken up. Fermentation then takes place in stainless steel tanks at controlled temperatures. After the end of fermentation, the Blanc de Noir Rosé can continue to harmonize on the fine lees for a few months....
