Vinification of the Maybach Sauvignon Blanc from Peter Mertes

The basis for the elegant Maybach Sauvignon Blanc from Germany is grapes of the Sauvignon Blanc variety. After harvesting, the grapes are immediately brought to the press house. There they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. After fermentation, the wine matures for several months on the fine lees before it is finally racked. After the wine has been completed, the Maybach Sauvignon Blanc is gently harmonized.
