In the glass, the Sauvignon Blanc from Palliser Estate offers a bright pale yellow color. This single-varietal New Zealand wine reveals wonderfully fragrant and complex notes of passion fruit, mangoes and pineapple in the glass. This is joined by hints of nectarine.
This New Zealand wine tastes pleasantly dry. It was bottled with 3.5 grams of residual sugar. As you would expect from a wine, this New Zealander naturally enraptures with the finest balance despite all its dryness. Taste does not necessarily require a lot of sugar. On the palate, the texture of this balanced white wine is wonderfully crisp. Due to its present fruit acidity, the Sauvignon Blanc shows impressively fresh and lively on the palate. The finale of this white wine from the wine-growing region of New Zealand South Island, more precisely from Waipara, finally convinces with considerable reverberation. The finish is also accompanied by mineral facets of the soils dominated by clay and gravel.
Vinification of the Sauvignon Blanc from Palliser Estate
This white wine clearly focuses on one grape variety, Sauvignon Blanc. Only premium grape material was used for this wonderfully balanced single varietal wine from Palliser Estate. The grapes grow under optimal conditions on New Zealand's South Island. The vines here dig their roots deep into soils of clay and gravel. When perfect physiological ripeness is assured, the grapes for Sauvignon Blanc are harvested exclusively by hand without the use of coarse and barely selective full harvesters. After the harvest, the grapes are immediately sent to the winery. Here they are selected and carefully broken up. Fermentation follows in stainless steel tanks at controlled temperatures. At the end of fermentation, the Sauvignon Blanc is allowed to further harmonize on the fine lees for a few months.
