Vinification of the Seven Flags Chardonnay Estate Wine Elgin Valley by Paul Cluver

The balanced Seven Flags Chardonnay from South Africa is a single-varietal wine, pressed from the Chardonnay grape variety. At the time of optimal ripeness, the grapes for the Seven Flags Chardonnay are harvested exclusively by hand without the help of coarse and less selective full harvesters. After the hand harvest, the grapes reach the winery by the fastest route. Here they are selected and carefully crushed. Then fermentation takes place in small wood at controlled temperatures. The fermentation is followed by a maturation of 11 months in French oak barrels.
