The Shiraz of Cederberg from the South African wine-growing region of the Western Cape in Cape South Coast is a complex, excellent and sensational red wine.
Already in the glass, this wine glows in a rich purple with purple highlights. The nose is skillfully taken by an intense aroma. Aromas of red berry fruits, mulberries and cherries are revealed. The wood aging adds after sweet spices and vanilla. The intense berry fruit is also wonderfully present on the palate. The texture is wonderfully smooth despite the dense body. The finish has a terrific length and already indicates the development potential.
Vinification of the Cederberg Shiraz
In the Cederberg vineyard site, the Shiraz grapes grow in south-eastern exposure on slate soils. The harvest is done exclusively by hand.
When the grapes arrive at the Cederberg winery, they are cold macerated in closed tanks for 2 days. The must is then fermented at a controlled temperature of no more than 28 degrees Celsius. This is followed by a skin maceration of 14 days.
Medium dry 225 liter barrels are used for the wood aging. In these this South African wine rounds off for a total of 15 months. Both French and American oak are used.
