The basis for the first-class and wonderfully balanced Twin Oaks Chardonnay cuvée from Robert Mondavi are Chardonnay, Colombard, Muscat d'Alexandrie, Verdejo, and Viognier grapes. After being harvested by hand, the grapes are brought to the winery as quickly as possible. There they are selected and gently crushed. Fermentation then takes place in stainless steel tanks and large wooden casks at controlled temperatures. After fermentation is complete, the Twin Oaks Chardonnay can continue to harmonize on the fine lees for a few months.
