Production of the 20 Years Aalto Limited Edition Ribera del Duero D.O. 3.0l in GP
The grapes for this wine come from selected sites in Ribera del Duero, in the heart of Castile and León. The climate is continental, with hot, dry summers and cool nights. These pronounced temperature differences ensure slow ripening of the Tempranillo grapes. The dense soils, rich in limestone, clay and gravel, provide the vines with a demanding environment and naturally limit yields. Old vines with deep roots produce concentrated, aromatic grapes.
The harvest is carried out with strict selectivity, parcel by parcel. The grapes are transported to the winery in small containers so that the berries remain intact. Several sorting stations ensure that only absolutely ripe and flawless grapes are used. After gentle destemming, the Tempranillo must flows into temperature-controlled fermentation vessels. There, a slow, precisely controlled fermentation begins, preserving the intense fruit aromas and characteristic structure of Ribera del Duero Tempranillo.
After alcoholic fermentation, the wine remains on the skins, during which color, tannin and aromatic complexity continue to develop. The young wine then flows into small oak barrels with a capacity of 225 liters. Some of the barriques are made from French oak, while others come from American oak. This combination gives the wine its distinctive profile of fine vanilla notes, tobacco, cedarwood and a delicate coconut nuance without overshadowing the dark fruit.
Maturation in barrique is generously proportioned, allowing the wine’s tannins to round out beautifully. Regular tastings in the cellar accompany its development. The cellar style of Bodegas Aalto is guided by clarity, depth and elegance rather than sheer power. Each barrel lot receives exactly the time it needs to achieve harmony and complexity. Only then are the best lots blended, specially selected for this Limited Edition marking the estate’s 20th anniversary.
Bottling in the imposing double-magnum bottle is carried out with particular care. The large bottle slows the maturation process and ensures exceptionally slow, harmonious bottle aging. This creates a wine with impressive long-term development potential in both aroma and structure.
