Banyuls Rouge Bila-Haut AOC by M. Chapoutier, a natural wine doux from the Banyuls wine-growing region in Roussillon, southern France, ideal with precious cheese, chocolate or desserts..

The Banyuls Rouge Bila-Haut AOC by M.Chapoutier is powerfully dark garnet red in the glass. In the bouquet, black berries smell in competition with small red fruits, which give the wine a beautiful freshness, gently accompanied by cocoa notes. On the palate, this natural sweet wine from Banyuls unfolds a great balance between the sunny power of the wine and the finesse of the tannins. Long-lasting in the finish, with a sweetness that becomes absolute enjoyment.

Vinification of the Banyuls Rouge Bila skin  AOC by M. Chapoutier

Only wines around the French village of Banyuls in Roussillon with at least 50% Grenache grapes may bear the appetite of Banyuls. The vineyards of Banyuls are located on the steep slopes on the Mediterranean coast, near the Pyrenees, the climate is Mediterranean, warm and characterized by sea winds, the mica shale soils are sparse and mineral, the yields correspondingly low.
 The Banyuls Rouge Bila-Haut AOC by M.Chapoutier is a Vin doux naturel made from 100% Grenache grapes, which are harvested very ripe, almost rosinated selectively by hand, destemmed, ground and macerated. By adding high percentage alcohol, fermentation is stopped for the Mutages sur  Grains, a process from 1285 to extract fruit notes and tannins. The wine was then aged for 8 months in vats. After bottling, further maturation takes place for 3 months.
