Dessert wines with finesse

Soberly considered, sweet wines contain 45 grams of fruit sugar or more per liter - joyfully considered, sweet wines contain an exuberant play of opulent aromas in a sweetish body. By no means pappsüß, but everywhere allerliebst and at any time smooth for the palate as well as charming for the senses.

Whether red wine, white wine, sparkling wine or fortified dessert wine - the irresistible character of sweet wines knows no bounds. For as diverse as the grape varieties are, sweet wines express themselves in just as many ways. From the exquisite Riesling Auslese, to fortified Shiraz wines from Australia, to fresh Moscato d'Asti - residual sweetness offers scope for personal notes. Welcome to the sweet side of life - the sweet wines on VINELLO.

Where does the sweetness in sweet wines come from?

The natural sweetness is already in the sun-drenched grapes, which sometimes dangle on the vines deep into the cold season for ice wine. The fructose produced is converted into alcohol during fermentation with the help of yeast. The longer this process lasts, the drier the wine becomes. In the case of sweet wine, this means only a short duration on the live yeast, so that the fructose, also called residual sweetness, remains in the wine. In many savory cases, the mold Botrytis cinerea also helps to concentrate the sweetness and acidity higher. The water contained in the grapes evaporates through the finest holes in the berry skin, which the fungus creates on healthy grapes. This produces noble and complex noble-sweet wines that can be kept almost forever and are thus served as an absolute specialty on very special occasions. These include many Trockenbeerenauslesen from Germany as well as Sauternes wines from the Bordelais region.

But sweetness is not solely responsible for the loyal lovers of the fruity sweet wine. For the balanced character is created by the illustrious interplay of sweetness and acidity, which harmonize with each other and create a complex profile.

Different varieties of sweet wines

Sweet red wine, white wine and rosé wine

Sweet wines stand alongside dry, sweet and semi-dry as an independent category for wine taste and thus have their own merits and nuances that make many a sweet wine an absolute specialty. Sauternes from the Bordelais vineyards, for example, has a worldwide following. It combines the sweet play between fruit and freshness with an aromatic body. Sweet wines, also known in many places as dessert wines, are ideal partners for sweet to creamy dishes and - as the name dessert wines suggests - usually belong with dessert.

Sweet sparkling wine

Sweet and sparkling - it's easy for sweet sparkling wines from Italy. The famous sparkling wines made from the Moscato grape variety delight with their intense bouquet and delicate fruit sweetness - and of course with their sparkling and zesty acidity. Whether for a stimulating reception, as an aperitif or for very special moments, the sweet sparkling wine impresses with playful lightness.

Marsala - the sweetness of Sicily

At the western tip of Sicily, winemakers press the inimitable liqueur wine Marsala, named after the quaint port town where the grape varieties Grillo, Catarratto and Inzolia are vinified together and fortified with alcohol. One-year aging in wooden barrels completes the Marsala dessert wine, which, with its soft taste and aromatic spiciness, cuts a fine figure as an ingredient for Italian dishes, but is also ideal as an accompaniment to tagliatelle and noble dessert creations.

Port wine - enhanced pleasure from Portugal

Sweet wine from the Douro Valley, fortified and shipped from the port of Porto, is made mainly from red wine, rarely also from white wine. Sweet port wine expresses itself in many ways and offers a wide range of ruby dessert wines. Whether Ruby, Tawny or Colheita - the sweet wine from Portugal convinces with wonderful residual sweetness and opens up notes of wild berries, berries and marzipan. Finish rich meals with a sweet glass of port and enjoy a sweet wine of the extra class, directly from the port district of Porto.

Sherry - Spain's sweet wine treasures

Sweet wine from the south of Spain is the result of elaborate vinification of the Palomino Fino or Pedro-Ximénez grape varieties. Effort that pays off. For the sherry dessert wine reveals sweet-spicy pleasure in an amber body that comes across as surprisingly fresh. Sherry sweet wines are an excellent choice both as an aperitif and as a digestif, complementing all sorts of spicy dishes. Whether cheese, soups or Asian cuisine - sherry dessert wines from the Andalusian city of Jerez de la Frontera are true originals for gourmets. But beware - with names like Fino, Manzanilla, Amontillado, Oloroso the sherry is usually vinified dry, while Cream, Pale Cream, Pedro Ximénez and Moscatel describe sweet sherry in the vast majority of cases.

Fortified Wines - Sweet Wine Homage

Fortified Wines are fortified sweet wines inspired by European classics such as Port or Sherry. Pressed from noble grape varieties and refined and fortified with aromatic brandy, these sweet wines from Australia and South Africa present themselves with intense spice and full-bodied structure. Serve these sweet dessert wines with a cozy barbecue, rustic get-togethers and festive desserts.

Madeira - dessert wines from the island

Madeira dessert wine comes exclusively from the island of Madeira, where, according to legend, winemakers first discovered this sweet wine specialty by accident. The wine from the island was fortified with brandy to survive the long sea voyage. Whether the rocking of the ship or the brandy was the decisive factor is still irrelevant today. The only thing that matters is the shiny amber body, in which aromatic facets of dried grapes and caramel emerge. Refined by years of aging in wooden barrels, Madeira reveals an incomparable harmonious finish that makes this sweet wine from the island of Madeira one of the best dessert wines for pleasure seekers.

Vin Doux Naturel - natural sweet wines

The sweet fortified wine from France is subject to higher demands and quality criteria, as one is used to from French sweet wines. Vin Doux Naturel is produced with the addition of alcohol, which is added during fermentation and stops the fermentation process. Thus, the dessert wine acquires the name Vin Doux Naturel - natural sweet wine. Rich in finesse and harmoniously balanced, the Vin Doux Naturel sweet wine develops the highest pleasure with sweet desserts, dried fruits and chocolate.

Mulled wine - the dessert wine for the end of the year

A sweet wine that you simply can't get around in winter: mulled wine. Whether red or white, mulled wine warms your fingers, stomach and head with its delicious sweetness and fruity flavors. This organic sweet wine is really something for everyone who wants to enjoy the cold days with spice and harmony. Pressed from fine Merlot or Airén and enhanced with all sorts of spices, make your home the best mulled wine stand in winter. Stock up - because mulled wine, along with a thick wool hat and scarf, is the best appendage in winter, and a popular punch-up to boot.

Things to know about sweet wines

How is sweet wine made?

Sweet wines are often created by stopping fermentation, which converts the natural fructose into alcohol. This is done by adding sulfur or alcohol, or by filtering or strongly cooling down the musts. The earlier the fermentation is interrupted, the more residual sweetness is contained in the wine. Some dessert wines are also fortified with high-proof alcohol.

What is the shelf life of sweet wines and dessert wines?

Sweet wines, like dry and sweet wines, can be kept for about a week after opening, but from time to time they can also be stored in the refrigerator for longer without loss of flavor. Due to their high alcohol content, fortified dessert wines can often be enjoyed up to 6 months after opening without any problems. It is also not uncommon for the flavor profile to improve when the dessert wine has been in contact with oxygen.

What goes well with sweet wine?

Sweet wines and dessert wines go well with many dishes and desserts and are also suitable as an aperitif. Depending on the type, dessert wines belong to the traditional cuisine of the country of origin and, of course, to all kinds of dessert creations - from fruit to chocolate mousse.

What is a sweet red wine?

If we speak of a sweet red wine, and not dessert wine or mulled wine, we are talking about red and sweet wines with a high residual sugar content. During fermentation, the grape's own sugar (glucose) is converted by the yeast into drinkable ethanol and carbon dioxide. In order for the red wine to retain its sweet note, a process called temperature-regulating fermentation is used. The winemaker reduces the temperature and kills the yeast cells so that the sugar no longer converts to alcohol. This means very sweet red wines usually have a low alcohol content. The principle is the same for sweet white wine . Wine is considered sweet from a residual sugar content of at least 45g/l. However, red wines taste less sweet than a white wine with the same residual sugar, because the tannins counteract the sweetness. Artificial sweetening of wine is prohibited in Germany and generally not welcomed in the wine world.
