The Pedro Ximénez Vino Dulce Natural from Emilio Hidalgo is a nobly sweet sherry and presents itself in the glass with a dark mahogany color and golden highlights.

The expressive bouquet is carried by fruity aromas of dried fruits (apricots) and floral notes. On the palate, this sherry is wonderfully concentrated, revealing intense aromas of raisins. Its oily texture already promises a fascinating drinking experience when enjoyed on its own.

Vinification of Emilio Hidalgo Pedro Ximénez

The hand-picked grapes are destemmed, gently pressed, and the resulting must is fermented in temperature-controlled stainless steel tanks. Afterwards, the young wine is racked, fortified, and laid to mature in American oak barrels.

After maturation without flor, the wine is transferred to the traditional solera system, in which sherries of the same type are aged in rows of barrels stacked on top of each other. In the lower barrels (solera), the oldest wines are stored, while in the upper rows (criaderas) the youngest wines lie. The sherry intended for sale is always drawn from the lower barrels. However, only a small portion (a maximum of one third) is removed, and the removed portion is then topped up with sherry from the upper rows. This principle is continued up to the top barrels, where young wine, the mosto, is added to the sherry. The oloroso, created under oxidative influence, is then blended with a naturally sweet wine.
