Fino Jerez Seco from Emilio Hidalgo is a dry sherry made from the Palomino Fino grape variety and presents itself in the glass with a light straw-yellow color.
On the nose, this sherry develops an intense bouquet of nutty notes and delicate wildflowers. The aromas on the nose are joined by hints reminiscent of bread and yeast. On the palate, it reveals a delicate, light, and elegant flavor with nutty aromas – especially almonds and walnuts come to the fore. This refreshing sherry finishes with a long finale.
Vinification of Emilio Hidalgo Fino Jerez Seco
The hand-harvested grapes are destemmed, gently pressed, and the resulting must is fermented in temperature-controlled stainless steel tanks. Afterwards, this young wine is racked, fortified, and placed in American oak barrels for its initial maturation. The barrels are only filled to a certain level (a maximum of 85%), allowing the characteristic flor (a layer of yeast) to develop, which seals the wine from the air and imparts its sherry-specific aroma.
After maturation, this wine is transferred to the traditional solera system, in which sherries of the same type are aged in rows of stacked barrels for three to ten years. In the lower casks (solera) the oldest wines are stored, while in the upper rows (criaderas) the youngest wines rest. The sherry intended for sale is always drawn from the lower barrels. However, only a small portion (a maximum of one third) is removed, and the removed portion is then topped up with sherry from the upper rows. This entire process is continued up to the top barrels, where the sherry is blended with young wine, the mosto.
