Emilio Hidalgo's Fino Jerez Seco is a dry sherry from the Palomino Fino grape variety and is presented in the glass in a light straw yellow colour.
In the nose, this sherry develops an intense bouquet of nutty notes and delicate wild flowers. The aromas of the nasal corals are reminiscent of bread and yeast. On the palate there is a delicate, light and elegant taste with a nutty aroma - especially almonds and walnuts come to the fore. This refreshing sherry finishes with a long finish.
Vinification of Emilio Hidalgo Fino Jerez Seco
Thegrapes harvested by hand are destemmed, gently pressed and the must produced therefrom is fermented in a temperature-controlled manner in a stainless steel tank. This young wine is then drawn off, sprayed on and placed in American oak barrels for the first ripening. The barrels are filled only to a certain extent (maximum 85%), so that the characteristic pile (a yeast layer) can develop, which seals the wine airtight and gives it the sherry-specific aroma.
After maturation, this wine is transferred to the traditional Solera system, in which sherries of the same type are aged in barrels arranged one above the other for three to ten years. The oldest wines are stored in the lower barrels (Solera), while the youngest wines are stored in the upper rows (Criaderas). The sherry intended for sale is always removed from the lower barrels. In this case, however, only a small part (a maximum of one third) is removed and the removed part is then filled up by sherry from the upper rows. The whole principle continues to the uppermost barrels, where young wine, the Mosto, is added to the sherry
