 Emilio Hidalgo's  La Panesa Especial Fino from the Andalusian sherry region D.O. Jerez is vinified exclusively from Palomino Fino. 

A bright golden yellow with golden highlights shines in this wine in the glass. Intense aromas of fresh nuts, Mediterranean spices and subtle mineral notes unfold in the nose. The palate enjoys a full-bodied and lively character. The final comes with a persistent length and elegance. 

Vinification of Emilio Hidalgo La Panesa Especial Fino

The

grapes harvested by hand are destemmed, gently pressed and the must produced therefrom is fermented in a temperature-controlled manner in a stainless steel tank. This young wine is then drawn off, sprayed on and placed in American oak barrels for the first ripening. The barrels are filled only to a certain extent (maximum 85%), so that the characteristic pile (a yeast layer) can develop, which seals the wine airtight and gives it the sherry-specific aroma.

After maturation, this wine is transferred to the traditional Solera system, in which sherries of the same type are aged in barrels arranged one above the other for three to ten years. The oldest wines are stored in the lower barrels (Solera), while the youngest wines are stored in the upper rows (Criaderas). The sherry intended for sale is always removed from the lower barrels. In this case, however, only a small part (a maximum of one third) is removed and the removed part is then filled up by sherry from the upper rows.
