The Gobernador Oloroso by Emilio Hidalgo is a sherry from the Spanish wine region D.O. Jerez, aged for many years.
A bright mahogany colour shines in the glass. This noble sherry convinces the nose as well as the palate with its strong nutty aromas - walnuts, hazelnuts and almonds. On the palate, this Spanish wine convinces with its full-bodied and dry character and a long-lasting reverberation.
Vinification of Hidalgo Gobernador Oloroso The grapes harvested
by hand are destemmed, gently pressed and the must produced therefrom fermented in a temperature-controlled manner in a stainless steel tank. The young wine is then drawn off, sprayed on and placed in American oak barrels for the first ripening. The barrels are filled only to a certain extent (maximum 85%), so that the characteristic pile (a yeast layer) can develop, which seals the wine airtight and gives it the sherry-specific aroma.
After maturation, the wine is transferred to the traditional Solera system, in which sherries of the same type are aged in barrels arranged one above the other. The oldest wines are stored in the lower barrels (Solera), while the youngest wines are stored in the upper rows (Criaderas). The sherry intended for sale is always removed from the lower barrels. In this case, however, only a small part (a maximum of one third) is removed and the removed part is then filled up by sherry from the upper rows. The whole principle continues to the uppermost barrels, where young wine, the Mosto, is added to the sherry. In the Solera, the amontillado loses its pile and the oxidative ripening process begins. During this phase, it develops its aromatic fullness and strong color.
