The vines here root deeply into soils of sand, limestone, and gravel. Naturally, Baron Nathaniel Pauillac is also influenced by the climatic and stylistic factors of Pauillac. This French wine can be regarded as a true Old World wine, presenting itself exceptionally impressively. When physiological ripeness is ensured, the grapes for Baron Nathaniel Pauillac are harvested exclusively by hand, without the aid of coarse or less selective harvesters. After the harvest, the grapes are quickly transferred to the winery, where they are sorted and gently crushed. Fermentation then takes place in stainless steel tanks and small wooden barrels at controlled temperatures. After fermentation, Baron Nathaniel Pauillac spends 12 months on fine lees to further harmonize.
