The basis for the first-class and wonderfully balanced Blanquette De Limoux Brut cuvée from Herpe Paul is Chardonnay, Chenin Blanc and Mauzac grapes. In Languedoc-Roussillon, the vines that produce the grapes for this wine grow on clay and limestone soils. The Blanquette De Limoux Brut is a thoroughbred Old World wine, as this French wine exudes an exceptional European charm that clearly underscores the success of wines from the Old World. The ripeness of the grapes for this wine made from Chardonnay, Chenin Blanc and Mauzac is influenced to a considerable extent by the climate of the growing region. In Languedoc-Roussillon, the grapes thrive in a rather cool climate, which is reflected, among other things, in particularly long and even ripening of the grapes and a rather moderate must weight. After the harvest, the grapes are brought to the press house as quickly as possible. There they are sorted and gently crushed. This is followed by the fermentation of the base wines. After assembling the cuvée, further maturation takes place based on the Méthode Traditionelle. Afterwards, the Herpe Paul Blanquette De Limoux Brut matures in the bottle for several months and is then disgorged.
