Fermentation then begins under temperature control, partly in stainless steel tanks, partly in wooden barrels, depending on the desired structure and complexity.

Maturation in wood plays an important role for this Chardonnay. The wine matures in barrels with light toasting. This creates the typical aromas of butter, vanilla, toast and nuts. At the same time, the influence of the wood remains elegant. Part of the wine remains on the fine lees.
