It is obvious that the Château Haut Bailly II Pessac-Léognan is shaped by more than just the soils of Pessac-Léognan. This French wine can, in the truest sense of the word, be described as an Old World wine that presents itself in an extraordinarily impressive manner. After hand-picking, the grapes are immediately taken to the press house. There they are sorted and gently crushed. Fermentation then takes place in large oak vats at controlled temperatures. After fermentation has ended, the elegant Château Haut Bailly II Pessac-Léognan is aged for several more months in French oak barrels.
