Vinification of the Kleine Zalze Chenin Blanc Vineyard Selection

This wine clearly focuses on one grape variety, Chenin Blanc. For this wonderfully balanced varietal wine from Kleine Zalze, only immaculate grapes were harvested. After the hand harvest, the grapes immediately reach the winery. Here they are sorted and carefully crushed. Then fermentation takes place in small wood at controlled temperatures. After the completion of fermentation, the Chenin Blanc Vineyard Selection is aged for several months in oak barrels.
