Crémant - the crème de la crème

Not every sparkling wine from France is allowed to bear the name Crémant. This is reserved only for the best sparkling wines that meet the strict guidelines. First, the entire grape, including stem and stalk, must be pressed. This process is called whole bunch pressing. This is the basis for more freshness, fruit and acidity in the finished Crémant. Only base wines of AOC status may serve as the basis. In addition, a maximum of 100 liters of must per 150 kg of grapes, as well as a maximum of 150 mg/l of sulfur dioxide are allowed. The most important criterion for a Crémant wine is bottle fermentation according to the Méthode traditionelle or Méthode classique. Crémant must be aged for at least 12 months, 9 of them on the lees. Crémant - the mirror of the land

Crémant de Limoux

Crémant de Limoux owes its freshness and character to grape varieties from the Languedoc region. Mainly Chardonnay and Chenin Blanc, plus Pinot Noir and Mauzac as secondary varieties.
