The multi-award-winning Crémant Grande Cuvée 1531 from Sieur d'Arques is considered one of the best sparkling wines in Southern France and was named after the year in which carbonation in bottles was invented or discovered in France.
This Crémant de Limoux appears in a brilliant white gold in the glass. A fine perlage transports aromas of green apple, pear, and honey, as well as floral notes of white blossoms. On the palate, the finesse of this sparkling wine is demonstrated by a delicate, restrained acidity and excellent mousseux. Its freshness unfolds here, along with flavors of honey and green apple, combined with an elegant minerality. In a medium-length finish, the lively character of this classic wine is once again evident.
Vinification of Aimery Grande Cuvée 1531 Crémant
The award-winning Crémant from the wine cooperative Sieur d'Arques pays homage to an important historical event. The year 1531 is dated as the first official mention of a sparkling wine from France. At that time, monks from the St. Hilaire Abbey discovered bottle fermentation by leaving semi-fermented grape must in sealed bottles to undergo further fermentation. Carbon dioxide, unable to escape, dissolved into the wine, making it sparkling.
The vineyards of Sieur d'Arques are located in Langedoc and consist of four different terroirs: Autan, Méditerranéen, Océanique, and Haute-Vallée, forming the viticultural basis for the Crémant de Limoux. The Crémant 1531 Grande Cuvée is composed of the grape varieties Chardonnay, Chenin Blanc, and Pinot Noir. These are harvested earlier than the grapes for still wines to ensure a robust acid structure. The base wines are then vinified a second time using the "Méthode traditionnelle" — that is, in classic bottle fermentation. The Grande Cuvée 1531 then rests on the lees for 12 months.
