Production of the Late Bottled Vintage from Osborne
In Port wine production, most of the wine is pressed by machine. During the fermentation process that follows, the temperature remains permanently at 25-28 °Celsius to ensure that the aromas are preserved. The fermentation process continues until it is stopped by the addition of alcohol. This moment depends on the desired character of the wine. When the desired level of sugar is reached, fermentation is stopped. For this purpose, the wine is put into barrels that already contain brandy. The amount of brandy again depends on how far the wine has already fermented. This is the moment when wine becomes port. The subsequent blending of the wines ensures that a consistent product is always obtained.
