Here, the vines sink their roots deep into sandstone soils. After being harvested by hand, the grapes are brought to the winery without delay. There they are sorted and gently crushed. Fermentation in stainless steel tanks and large wooden casks follows at controlled temperatures. After fermentation is complete, the Modri Pinot Noir Goriska Brda can continue to harmonize for 6 months on the fine lees.
