Vinification of I'M Winery Rara Neagra
This powerful red wine from Moldova is made from the Rara Neagra grape variety. After the grape harvest, the grapes are immediately brought to the winery. There they are selected and carefully crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. The vinification is followed by maturation on the fine lees for several months before the wine is finally bottled.
