Paul Cluver’s Sauvignon Blanc reveals itself in a clear, bright color with a hint of green. On the nose, fresh and pure aromas of elderberries, gooseberries, passion fruit and blackcurrants emerge. These aromas are also reflected on the palate, which shows a lovely creamy texture and minerality. All in all, a lively white wine that stylistically can be placed somewhere between the Loire and Marlborough.

Vinification of Paul Cluver’s Sauvignon Blanc

Short cold maceration to extract aromas and reduce acidity. Fermentation of the “free run” (a portion of the Sémillon grapes is fermented in used wooden barrels). Aged for 5 months on fine lees.

Food recommendation for Paul Cluver’s Sauvignon Blanc

We recommend it as an aperitif and as a companion to salads and light meat dishes in summer, as well as to robust fish dishes and cheese platters in autumn and winter.
