Vinification of Lawson's Dry Hills Sauvignon Blanc Reserve

Here, the vines root deeply into gravel soils. The moderating influence of the nearby river causes the grapes to ripen more slowly and develop greater aromatic complexity. The berries for this New Zealand white wine are harvested swiftly and during the coolest parts of the day once optimal ripeness is assured, to preserve their aroma. After harvest, the grapes are quickly transferred to the winery, where they are carefully sorted and gently crushed. Fermentation then takes place in stainless steel tanks and large oak barrels at controlled temperatures. The fermentation is followed by several months of aging in French oak barrels.
