With the Neil Ellis Cabernet Sauvignon Stellenbosch, a first-class red wine finds its way into the glass. It reveals a wonderfully dense, purple-red color. The first nose of Cabernet Sauvignon Stellenbosch shows nuances of mulberries, plums and damsons. Joining the fruity components of the bouquet are notes from barrel aging such as oak, cinnamon and oriental spices.

On the palate, Neil Ellis’s Cabernet Sauvignon Stellenbosch starts off delightfully dry, firm and aromatic. Some wines are dry on the label, others truly are. This red wine belongs to the latter group, as it was vinified with just 2.5 g of residual sugar. On the tongue, this powerful red wine is characterized by an incredibly dense texture. Thanks to its lively acidity, the Cabernet Sauvignon Stellenbosch presents itself impressively fresh and vibrant on the palate. On the finish, this youthful red wine from the Coastal Region wine-growing area finally thrills with considerable length. Once again, hints of blueberry and morello cherry appear.

Vinification of the Cabernet Sauvignon Stellenbosch by Neil Ellis

This red wine clearly focuses on a single grape variety, namely Cabernet Sauvignon. Only first-class grapes were used for this exceptionally powerful varietal wine from Neil Ellis. After the harvest, the grapes are brought to the press house as quickly as possible. There they are selected and gently crushed. Fermentation in small oak barrels at controlled temperatures follows. After fermentation is complete, the Cabernet Sauvignon Stellenbosch is matured for another 18 months in French oak barrels.
